THINGS TO DO WITH COURGETTES

COURGETTES WITH VINEGAR, MINT AND GARLIC
5 large courgettes (about 1 kg)
extra virgin olive oil
salt
2 tablespoons white wine vinegar
2 teaspoons crushed dried mint
2 - 3 garlic cloves, crushed.
Trim the ends of the courgettes and cut them lengthways into slices about 0.75cm thick.
Arrange side by side on a baking sheet lined with foil and brushed with oil. Brush the slices
generously with oil and sprinkle lightly with salt.
Cook under a preheated grill until lightly browned, then turn over, brush the other side with
oil and return to the grill until browned. Mix the vinegar with the mint and garlic and brush
a little on to each slice. Serve at room temperature.
COURGETTE SALAD
2 large courgettes
3 tbsp olive oil
1 tbsp lemon or lime juice
1 tbsp clear honey
2 tsp poppy seeds
1 small garlic clove, crushed
salt and pepper, to taste
Grate the courgettes on the course side of your grater then toss in olive oil, lemon or lime
juice, clear honey, poppy seeds and the crushed garlic clove. Add salt and pepper to taste.
Serve immediately before it goes watery.
COURGETTE AND PARMESAN CHEESE TART
1 x 375g sheet ready-rolled puff pastry
3 courgettes, thinly sliced
2 garlic cloves, sliced
olive oil
4 tbsp mascarpone
50g parmesan, grated
Heat the oven to 200C/fan 180C/gas 6. Unroll the pastry onto a baking sheet and score a
border 2cm in from the edge.
Toss the courgettes and garlic with the olive oil and lots of seasoning.
Mix the mascarpone with half the parmesan and spread inside the border. Arrange the
courgettes in overlapping rows. Bake for 15 minutes, then scatter with the remainder of the
parmesan. Bake for another 15-20 minutes.

1½ pints (900 ml) water or white vegetable stock
salt and pepper
1 tablespoon chopped basil
