Egg Grading (Form 2098)
Purpose
To record the results of egg candling/grading.
Completion of Form
Heading — Heading information should be accurate and complete. Refer to
Policy and procedure section II-1 for more complete instructions.
Under “Wholesaler/Egg Handler,” enter the name address and establishment
number of licensed egg handler that is the source of the eggs.
Grading Section — Record the results of egg grading. Under dozen available,
record the total dozen available in the lot.
Warning/Violation — Record in this section, lots which are in violation and
require corrective action.
• Accurately describe the lot (grade, size, code) and the total number of
eggs in the lot.
• Describe the violation
• List instructions for correcting the violation (i.e. regrade, relabel, etc.).
Grading Summary
A. List the total number of dozens of eggs available in grade and size
candled (regardless of code date). NOTE: Before you begin grading, you
must define what comprises a lot. Size and grade always define lots.
They are further defined by the code dating on the carton or box. Be
familiar with these code markings. One sell by date may represent several
days production, with additional markings indicating the day and time of
production, the line number or the plant in which they are produced.
B. Enter the number of 100-egg samples graded for each grade/size.
(Example 2 samples of 100 equals 2 samples, not 200)
