Ingredients:
• 225g (8oz) 'Easy Cook' long grain rice
• 15ml (1 tbsp) Sunflower Oil
• 1 onion, finely chopped,
• 1 clove garlic, crushed,
• 2cm (3/4in) fresh ginger, grated (optional)
• Squeeze of lime juice
• 10-15ml (2-3 tsp) medium curry powder
• 1 red pepper, de-seeded & diced 175g (6oz)
• 175g (6oz) Frozen Peas
• 225g (8oz) Chicken Breast Fillets, cubed
• Salt and freshly ground black pepper
• 25g (1oz) Butter
• 15ml (1 tbsp) fresh coriander, chopped
• Lime wedges for serving
Method
1. Cook the rice and drain. Reserve.
2. Heat the oil in a large heavy-based frying pan. Add the onion,
garlic and ginger with curry powder. Sauté until softened.
3. Add the pepper, peas, Chicken and rice. Season
4. Cook over medium heat until heated through. Add butter,
coriander. Serve with lime wedges.
