Cauliflower Kheer

auliflower Kheer is a tasty desert that you got to believe when you see and taste it. This
is the beauty of Indian culinary that so many new and innovative dishes have been
created. The energy that man has spent on creating new dishes is manifolds.
Ingredients
1. Cauliflower florets, grated fine 1.5lbs
2. Full cream milk 1.5 Litre
3. Ground cardamom 1tsp
4. Sugar 300gms
5. Flaked almonds 75 gms
6. Raisins optional 50gms
7. Desiccated (shredded) coconut 50 gms
8. Pistachios, chopped 50 gms
9. Banana firm 4
10. Lime 1

Methodology
1. Sauté grated cauliflower for about 10 to 15 Mins on low heat.
2. Bring the cauliflower, milk and cardamom to the boil and simmer until the milk
thickens.
3. Add the sugar, almonds, raisins and coconut and simmer for 10 minutes. Pour into a
bowl and serve sprinkled with the pistachios.
