Introduction (general Smokin’ Okie stuff)
Thanks to everyone for their help and assistance in producing the “Turkey 101” edition of my 101
series. It‟s a very popular subject and certainly too long in coming. The amount of information I
have on turkey is just too much, so I‟ll make this first attempt and consider this a work in progress.

Smoked. Every year around the holidays, we seem to get an ever increasing number of requests for
